Winter update

It's been a cold and frosty July! Our average minimum temperature for the month was -0.5 degrees, with a finger numbing 16 mornings starting out below -2.0 degrees. But frosty mornings mean clear, sunny days, and that's precisely what we want for getting the vineyard pruned! Due to all this sunny weather, our rainfall was quite a bit below average for July, but that's ok because nearly every other month has been above average lately and it's given us a chance to catch up on our pruning. 

The cold frosty mornings have also helped with cold stabilising our 2021 red blends. Wine naturally forms a crystalline deposit, and chilling it before bottling makes these crystals come out in the tank, rather than later in the bottle (and ending up in your glass). By storing the red blends out in the uninsulated part of our winery, a few good frosty mornings mean less refrigeration is required to chill them down and get these crystals to settle out in the tanks.

The wines will then be filtered and bottled in Spring, which is just around the corner now!
